I have not ridden any bikes with apes, but I have tried on a few pair, the most comfortable for me were between 14 and 16 inch on a 4 inch pullback riser, but I really need to ride them to determine what I like best.
I am 6'4 and use 16 inch apes. Around town, no windshield, but traveling you need a windscreen to block that wind off your chest.. I don't like them to be above my shoulders as that gets very uncomfortable after awhile riding. Also be prepared to continually put them back where you want them as they tend to get loose.

Windshield with apes I don't get... no offense...
If your bars are loose... try making a couple of strips out of a soda can, cut them to the length of the circumference of your bars. Bolt them back up and you will probably never have the bars moving problem again. It has worked for me.
Thanks for the responses. Some good feedback. Based on what I'm reading here I believe I'll wait until after I do the endurance run to put on the apes.

Not really in the ape range, the stock 07 heritage bars are I think 12 or so,, there just right at or maybe a little below shoulder height,, anyway for me I've never even though about chaning them, comfort + with them...
