I'm an engineer not a lawyer but I'd bet there is no way they can stop you from riding your bike to work. If you are riding legally how could they stop you? What would be considered not to have a negative influence on the students? What if you drove a monster truck with 48 inch tires and a 700 hp engine?
Unless you are somehow not adhering to a dress code for teachers by leaving inappropriate gear on, or disturbing students with exhaust noise, I can't see any standing for this. Sounds like you just have an ******* boss and if he tries to fire you, or discipline you, you have a great case to get his *** fired.

........I was lectured that the use of my 2000 flh should not be used as a daily means of transportation to and from work....
Should is their opinion, they did not tell you "will not, could not, better not" etc.
I would just say "OK, have a nice day", and quietly go back to work.
Hahaha that's crazy. I live here in San Antonio as well. That's funny. Sounds like the Superintendent should receive a letter notifying him or her of that meeting you had with the principal. Good luck
