Riding a slow bike fast means you're using all, or nearly all of it's capabilities. That means one heck of a fun ride but no "reserve capability" should road conditions change (dirt/gravel), a critter runs out on the road, a car enters your lane or any number of other typical street riding problems arise. Riding a fast bike slow means TONS of capability to spare and the ability to drastically change your line to avoid unforseen obstacles. However, it tends to be a bit boring as the bike "isn't even trying". (been there too)
Personally, I prefer to ride a capable, but not necessarily "fast" bike at an elevated and entertaining pace while leaving a little bit in reserve to avoid that texting cager who just crossed the centerline or that bit of gravel kicked up by the last idiot who cut the corner.
