Default Road trip through Texas. Need input

Hey ya'll, I'm planning a solo road trip from SC to CA (Los Angeles area) to see my daughter. I'm retired and will be taking my time and avoiding interstates as much as practical. I have a brother who lives in Austin Texas who I will also be visiting along the way.

My question is, heading out of Austin westward towards Phoenix, what would be a good scenic route to take? Also any suggestions on what routes/areas to avoid. For me scenic is wide open spaces, mountains, deserts, plains, etc. I'm thinking about hitting Roswell and Tombstone along the way just for kicks.

After Los Angeles I'll be heading North towards Oregon and then east towards Sturgis before heading back south east towards SC. So if you have any suggestions about those areas I'd also appreciate the feedback. I've been to Sturgis so I'm already familiar with the big sites in that area and east of there. It's the western, north western and south western areas I haven't traveled yet (on a motorcycle). I've already been to some of the big national parks like Yellowstone, Yosemite, Zion, Grand Canyon, Moab and others on family vacations so I'm not planning to go to those locations again unless its to ride through them to get to another location. Looking mainly for nice scenic rides.

Any suggestions would be appreciated.

Thanks in advance!

Once you leave Austin, you're pretty close to ride "The Three Sisters" below Fredericksburg (Nice Town, close to Luckenbach). If you do, be sure and eat at The Bent Rim Grill. Best burgers around, cool little place. It's going to be Hot in Texas so be prepared. 290 out of Austin is a nice 2-lane rd. Watch for deer. Try some BBQ.
Marfa and Alpine I hear are nice below Fort Stockton. You could even dip down to Big Bend but that's a was down.

WATCH FOR DEER..!!
Last time I rode across Texas, I noticed so many road kill deer along the way, that I just got off the road as dusk approached.

Roswell is kinda cheesy but it's fun to say you stopped by at the museum

A little out of the way, but Tombstone is a good stop as well
