Default heads and jugs

Typically how long should a tear down and rebuild take in terms of hours? I have found a HD mechanic to do the work. I am sending my heads out to be ported and jugs to be bored to 105. Putting in a new cam and lifters, bearings, seals, adjustable push rods.
I am trying to have a budget to stick with in terms of labour. How long does it take?

For an entire top end to be replaced, I think most places will quote 8-10 hrs.

I figured bout 10-16 hrs? To change cams I think is 4.
