To put a CV aircleaner on an S&S carb, you will need an adapter plate and a new choke **** if you were running the tear drop.
Kuryakyn sells the adapter
As I stated before, it's hard to beat the stock 40 m.m.CV on a stock or mildly hopped up motor. The S&S is a great carb, the Mikuni is my personal preference on a hot rod motor. The 120 JIMS motor comes with a bigger CV. It's 51m.m. so those are pretty good carbs. There has been a little mis information posted in this thread. The stock CV is 40.mm. It has an accelerator pump. The carb has a vacuum operated slide which controls the amount the carb opens regardless of the butterfly opening. The jet needle is attached to the slide. You can get a 44m.m. CV too but it's not for a stock motor. Several sizes of S&S are available for different size motors. Mikuni makes a 42HSR for stock motors, it's a great carb, but it won't help a stock motor gain power, it's for big bore cammed up, higher compression bikes. The Screamin' Eagle and Ness air cleaners are easily adapted. You can spend the money on the S&S but I don't think you'll gain anything but a cool aircleaner cover. There is a kit to adapth that S&S cover to the stock CV. There are alot of air cleaner option for that CV.
