I am 6'4" and I have 16'' apes and they do help with my back for shorter rides but I found that on longer rides I still get hunched and my back hurts because of the wind but I put a rider backrest on and it helps a lot on those long rides.
+1 on going and sitting on a bunch of bikes with Apes. My local dealers always have a few. Go and sit on them and note which ones feel "right". If you can talk them into a test ride, better yet. Don't tell them your just trying the bars.
I would second the bars, but have found that a backrest forces me to sit more upright. Sounds like you are in for a few changes soon.
Have you tried adjusting the bars on there? A little bit of change can make a big difference. I tried a few different angles on mine (bad neck) and ended up about 2 inches down from where they were, huge difference for me, no more neck pain.
It took some trial and error, what felt good in the garage didn't necessarily work after an hour on the road. Just kept moving them up and down an inch at a time until I hit the sweet spot.
