I did that a few years ago. Had a great time. Meetings in Scottsdale, and went out a few days early. Easy ride up 17 to Flagstaff, and then to the south rim of the canyon. You should get into Sedona too, but do it via 89A southbound out of Flagstaff. That road was just about the highlight of my trip. Glad I did it southbound. It's pretty steep, and going south (downhill) you get to see so much more than if you do Sedona to Flagstaff on 89A northbound. You won't be disappointed. (Look at it on Google Maps or Google Earth. It was a blast.)
I started out heading up 93 to Kingman, and then to Oatman, an old copper mining town. It's like the wild west with plank sidewalks, donkeys walking down Main St, etc. There's historic route 66 up there too. Runs parallel to 40. Great country to ride out there. I heard before I went, to NOT go to that glass skywalk up near Kingman. Real rough dirt road, and bikes unsecure for a few hours while a bus takes you to the skywalk. Didn't go, so I can't verify.

a really good resource for riding Arizona.
89A is popular, but everyone does that ( esp weekends) - there are plenty other places and roads which can be fun, maybe less traffic or an alternative choice based on weather
...and AZ has great variation in elevation- temps at Flagstaff and Grand Canyon are already near freezing in the morning ( usually about 25º below PHX).
the piney woods of the moggollon rim are nice- watch for elk in early morning and from about 4 pm on- they will just wander out on the road....the White Mountains ( Apache Lands) and hwy 60 between Globe and Show Low
if you have interest in history, we have lots
monument valley is always great and easy to plan a loop up there, the Navajo reservation
BTW the shoot out in tombstone has be temporarily shut down- one of the guys used live ammo and shot another "actor" and a bystander was hit as well

Tombstone is a cool place to visit. Food at the Crystal Palace is dam good.
