I can tell you that a few years back a service writer for BH-HD said that the moco
suggested "operating temps" were between 180-220, but said that at that time many of the bikes he saw were well over 300 degrees.
IMHO if you can stay in the 180-220 temp range your bike will run better than when it does when it gets up to 300.
My recommendation is a quality oil cooler such as an ultracool and the head fans both.
