Its not rocket science. Run your tank down to empty, fill up, reset one of the trip odometers. Then run down to nearly empty again, fill up & divide the miles on the odometer by the number of gallons you just bought at the pump. In other words I dont come near 200 miles per tank like alot of people claim. Takes 10 seconds & everyone has a calculator on their phone. Easy way to see if anything is going on with your engine.
My old 88 motor would regularly get 46-48 mpg on the two lane backroads 45-75mph. I have seen as low as 26 mpg. running close to triple digits in a headwind crossing Kansas. Ex GF and I rode to Bikes Blues & BBQ doing 55-60 mph and achieved 50mpg. on the two lane roads. Bone stock motor with SE air cleaner and a Supertrapp . Individual results will vary. I highly recommend a re tune.

My stock 2019 EG Standard 107 M8 regularly gets 35 - 36 MPG running these flat Texas highways at 75 with the cruise on. Cruising at 70 I have seen 37 a couple of times. I only have 6 thousand miles on the bike so far, so I am still evaluating it.A few people have told me that it may come up a tick more as it gets some more miles on it. I am skeptical of that, but whatever. I am riding it. I am just surprised it isn't closer to 40.
I get 40 - 42 pretty regular out of my 88 cu stage 2 Fat Boy running highway speeds.

I only rented an Ultra Classic w an M8 & I've gotta say the mileage seemed pretty good. I know they set the bikes up so lean these days. I'm not expecting 45 mpg out of my twin cam but anything close to 40 would be ideal. Keeping her 70-75 mph this tank to see how it goes. My best mileage ever was east of Colorado Springs on the high plains going 65-70 mph & had gotten 36mpg. I don't know if the elevation had anything to do with it, around 6000 ft or more up there.
Where I live, to get almost anywhere, you need to go 75-80mph on a hilly section interstate 15 for a minimum of 10 miles.... I have three bikes, '01 Springer w/OEM 88", '03 Heritage w/95" big bore, and '16 Bagger w/124" FuelMoto S&S.... as expected, the three bikes get less MPGs as you progress from the 88" to the 124" bike... BUT none of them get 40MPG if I run on the freeway to go anywhere... they average 38mpg (88") to 34mpg (124").
There is also a day ride I use, on back winding roads, no freeway, where the speed can be 60-65, but mostly 55ish.... On that day ride, again the MPGs increase as you go from the 88" to the 124" bikes, but that route gets from 46 mpg (88") to 41mpg (124")...
