Welcome to the touring forum ( I see it's your first post ).
I have noticed the same thing (slapping feel from the rear of the helmet).
Funny thing is that it stops when my wife rides with me.
I'm pretty sure that the wind comes over the shield and then eddies ( like a reverse curl ) behind the helmet.
Apparently when the wife rides with me , the rear settles downward,the shield angle changes,and her helmet changes
the airflow and stops it.
So far this only happens with the stock height shield (12") .
Any other shorter height shield stops this from happening.
As far as noise from a full face helmet , you'll get all kinds of variables depending on which brand and shape you have.
This happens with a half helmet also on my bike.
I also noticed with a full face that the wind noise is less and engine noise is higher.
With the half helmet , the wind noise is higher and the engine noise is less.
Might want to try different height shields (shorter than stock) and see when you get to a more comfortable (less turbulent) height.

If your helmet has a chin curtain install it, it will help some. The new Shoei RF-1000s come with the curtain. It prevents, to an extent, the turbulent air from buffetting the from part of the helmet. Get some good ear plugs.

When I ride in high winds or speed (75+ mph) the buffeting on my RK C is horrible.

I have an 08 EG and am looking into purchasing a full face, probably an Arai profile pre-wired from JMcorp. While looking around, I came across this informative video on YouTube ref helmet noise. It talks about the noise at the rear of the helmet.

Neat video - I have a stereo system inside my helmet and the earphones fit pretty tightly - that helps with any outside noise. Turbulence on the driver side of the windshield is a problem unless there's a way to introduce air to fill the void that's created due to the speed of the bike. Not sure if the street glide does that or not.

You know....some of that air my be coming up between the fairing and the tank (Around the fork area). I've seen somewhere else where a guy has actually built a homemade dam that would sit in there and eliminate some of the problems.

I know that there is a small airdam there on the 08's, but I think if a guy could make 1 out say 1/4" rubber with a support( to allow the forks to move ), we might eliminate a lot of wind noise and bufferening.

They say the way to check this is to ride down the road, put your left hand/ forearm across your chest and see how much less wind you get to your face.

My FF is an Icon and I've had no probs with buffeting generally. My half helmet is an HJC. There are certain times when I get some buffeting but I think it's more to do with the wind direction in the mtns and how the bike is slicing thru it on a given day. But if a calm day and no significant windaside from the speed of the bike then no probs.

My windshield is a bit lower than standard - it's about even with my mouth or chin when seated on the bike. I like to be able to look over the top of it.

I haven't had any problems with my rf-1000. As you can see from my pic I have a short windshield
