I'm getting ready to have a SE 255 cam installed with adjustable pushrods..I have a chance to buy a used set of SE 103 jugs and pistons. My question is what else will I need to buy, do I still did the adjustable pushrods or should I use my old pushrods and how much more labor is involed than a cam only job? If I get the 103 and cam done how many labor hours would the dealer charge? I won't need any dyno time...I have a PC-V with map from Jamie at FuelMoto.

if you are going to the 103,, i would say ,have some headwork done... higher lift on cams need adjustable rods....those pipes will be what kills the build... a good dyno tune can be very impressive ,over a canned map
The gaskets for the upper rocker cover, and orings for pushrod tubes, and breather filter, oring , gasket set for the breather in the rocker cover are way less than the adjustable pushrod kit is. You can use your oem pushrods that way. If you are going to do bigger things later maybe you should go ahead and get the adjustables. Or go ahead and save a little money and do the 103 now. Do a search and find one of the cam jobs in detail here and I think if you have some tool you can do the cams yourself, probably the whole 103. With a service manual.
My question would be who is selling the jugs and why. I would check to see what it would cost you to have your stock jugs bored to match a set of pistons rather than buy someone else's cast offs.

I tend to agree...I would bore my own out or buy new before I would ever buy a used set. I'm not sure what the cam job is costing you but you should be able to go big bore between $750 - $1000 installed.
