You may want to post your question over on Harley Tech Talk. There are a lot of riders there who have done carb conversions and they can provide you with a list of parts and such. I'm not sure if any were FBW bikes though.
Good luck and let us know how your project goes. You may be the first ever to convert a FBW bike, but I doubt it.
i would suggest that the current generation efi is superior to carb in many ways- why change?
switch to carb of earlier versions was pretty easy, plug up the extra holes in the tank, add a petcock.
swap manifold, add carb and some throttle cables
then sort out the ignition
not too tough, pretty much off the shelf 2006 and earlier H-D parts will accomodate.
( I waited to the current efi generation to get a twin cam--- but still have 4 carbed bikes too.)

The ignition would be the tricky part. Harley discontinued production of carb wiring harnesses. Now I don't know if this is only in regards to evos, just finished up doing a swap this week on a 98 ultra. totally worth doing in the long run on the evo allows more flexibility. Really didn't break the bank doing the build either about 1K all said and done. Now doing it for the twin cam looks expensive just after browsing over S and S and just the ignition module is over $600
I don't miss the carbs in going from a '99 Heritage to an '07...runs better...got it piped up and tuned up on the dyno...runs way better..no warm up..no popping....to each his own I guess.....I just don't see any advantage there...
In reply to OP's question, I can see no benefits of converting back. EFI with the latest electronics enables an engine to run a much bigger injector than carb, so it can give more power, but provide correct fuelling throughout the rev range and run better than a carb can do.
The other beauty of EFI is that it is infinitely adaptable so we can change things easily and still get the bike to run well.
thanks for all the input,and i have to agree that efi is effortless,when u have the proper tune.i currently run a pcv,with auto tune.not the best but has worked for me.i have an old school friend that believes only in carbs,and that belts are for pants,chains are for motorcycles.needed a little ammo for coversations as he has forgotten more than i will ever know.happy thanksgiving to all!
