I would like to convert all my lighting over to LED's. Any advice would be great. Bike is a 2000 Ultra Classic. I don't to screw up my electrical system.

Here is what I did. Not cheap, but it makes a huge difference.
+1 on Custom Dynamics. When I get ready to do my headlight I will most likely go for the truklight as it is supposed to be more visible to oncoming traffic in daylight.
I'm curious also, as to when the load equalizers come into play, and what exactly they accomplish. I've read you can do the harley led brake light ( or BAL ) and harley turn signals and they don't need load equalizers. Are they built in Harley and BAL's ? and not Custom Dynamics ? I've also read Truck Lite's are just plug and play also. Not the case actually ?
Are load equalizers just putting a load on the charging system to make up for the led's lack of current draw ?

LED taillights do not require a load equalizer. LED turn signals do. Basically a load equalizer compensates for the low power draw of LED signals. It keeps you from suffering hyperflash. Which is what you get when an incandescent bulb is burned out.
As far as the HD LED signals I have heard that they have some sort of load equalizer built in. But I can't say for sure.

"Stock flasher relays on motorcycles are designed to blink twice as fast as normal when a bulb is burned out to alert the driver of this condition. Leds consume so little power compared to the stock bulbs, that the flasher relay thinks that a bulb is burned out when LEDs are used in place of stock bulbs. If you have replaced your stock turn signals with LEDs and your turns signals flash too fast or do not flash at all, you will need to add a Equalizer, or replace your flasher relay."
