For those of you who have mounted your PV, how did you end up routing the data cable?
Any suggestions and tips?

Where are you mounting it? The 4 pt phone mount from iron aces fits the PV, and I would assume there's enough cable to follow the frame down from there under the tank and seat and over to where it needs to go, no?
That's what I did, mounted it on my handlebar using a ram mount, ran down the handlebar, under the tank and then down the left side to the diagnostic plug. Enough cable, no problems.
I didn't mount mine but I would run it under the tank where all the other wires run in the plastic track. I just ran my amp wires there and the tank comes off very easily.

I got the Techmount that mounts to the handlebar controls from FM. Trying to figure out the best way to run the cable. Would it be easier to run it under the dash instead of under the tank? Looks like the tank route may be cleaner, though.

Take the console off and run the wire under it and see if you can live with the look of the cable coming out in the front of the tank. If not, continue on and remove tank. The newer tanks come off in minutes. The fuel line is a quick disconnect fitting, no tools for that.
Actually, it tucked right through the frame at the fuse box and I ended up routing it up and under the dash. Was a lot easier that way, at least it seemed and you couldn't see it at all.
Has anyone tried using the fuel cover mount the Kuryakyn sells. It looks like a nice way to mount the PV without have to run the cable along the handlebars.
