So, an update on this, I found a vendor http://www.3brpowersports.com/, that makes (or sells, anyway) waterproof USB connectors.
Basically I bought 2 things 1) a cable that connects to your Deutsch accessory port under your seat. I'll run that under the console, this has a waterproof connector at the end, and 2) a cable with a waterproof connector to a 9" Mini-USB cable into the Nuvi
