I have a 95 Ultra. On my 02 Silverado, I use chains on the tailgate for support instead of the cables. My rear tire fits just at the edge of the bed (newer bike my be longer).
I do like the idea of the jack though. Just be sure to utilize lots of tiedowns for safety and piece of mind.
For loading, I use a BlackWidow arched 42" wide loading ramp.

My Dad hauls his Heritage or Ultra in the bed of a shortbed extended cab Chevy. Because we were concerned about the tailgate supperting weight we bought a 4 foot long and 8 inch wide hunk of c channel steel and we mouned it to the bed to support the weight. It worked perfectly until about a year ago he bough one of those automatic loaders, he is in his 70's and did not feel comfortable loading it with a ramp anymore.
