Baffles gone...
Just removed the baffles from my V&H 4" rounds. Loud... yes. Actually very impressed so far.
Question - I know this reduced the back pressure and that corresponds a small decrease in power (doesn't seem like a lot so I'm ok with it - besides putting in new high torque cams soon). Anyway, I'm hearing that this reduction in back pressure will ruin my valves.

I doubt you'd have any problem.
"valve problems", might be burned valves or seats, this is likely to happen if there is a leak at the head and oxygen can be drawn in and turn the exited gasses into a "cutting torch".
your exhaust tract should be long enough where that wouldn't be a problem.
you are likely to see substantial performance gains at 6000 rpms now
the "backpressure" is a real generality- more an issue is exhaust gas velocity- if the exhaust tract suddenly gets "larger" then the exhaust gasses will slow down and not exit as quickly.
there are all kinds of factors, length, diameter, rpm etc. etc. add in cam profile and it is more complicated than maybe any other part of the system.
