Some of the nicest I've seen are at Fox Creek Leather. They're usually at the shows on the east coast here. But basically the usual sizes S-to XL (or maybe even XXL) I wouldn't skimp on quality of the leather...you'll feel it believe me. They make a good heavy grade of leather chap. http://www.foxcreekleather.com/You can trip the length with a good scarp pair of sizzors...but remember to leave a little length for when you're sitting.

Wow you can actually buy chaps ?
Sorry I live in the Uk I thought chaps only came as part of the H.O.G mebership pack as they are the only people you will ever see wearing them here. Everyone else on a harley/cruiser wears jeans either leather or denim. WHislt I admit chaps look good over a pair fo skin tight jeans on a girl I can never shake the YMCA/Blue Oyster bar image out of My head when I see men wearing them.

Yes, you can buy chaps in the US and they are actually quite practical. Your bum is against the seat, so there is no need to cover it for warmth, although safety-conscious types might observe that coverage in the event of a misshap is a Good Thing. Similarly, your front is mostly shielded from the wind by the tank. Eliminating the coverage makes for more comfortable seating in the saddle. In some cases, chaps also provide a certain aesthetic benefits, as Scooter Wench has illustrated. That said, I would observe that counter-examples run about a 100 to 1!
One thing I'll mention with respect to the original post: do not get chaps that are "boot cut". You want those puppies snug on the bottom so that air doesn't come up them, particularly if you have forwards or highway pegs.
And for fun, here are some questions for the chaps wearers in the crowd:
Have you ever worn them into your workplace after riding to work?
Have you ever worn them meeting someone new on a date?
Have you ever worn them into a store (motorcycle stores don't count!) or the supermarket?
Have you ever worn them into a non-biker restaurant or bar?
How little have you ever worn under a pair of chaps?
