Running hot and dieing
Thought the problem was not as common on the later years, but a failing cam sensor in the nose cone of the cam cover was/is a fairly common issue. Yours does sound electrical as often times electrical components work fine when cool, but fail when they heat up. That would be a good place to start.
You should visually check the cam sensor for the potting medium in that sensor (goo) to see if it is melting or oozing out. Pulling the "V2" cover plate will expose it. Then you can warm up the sensor by either running the engine, or using a hair dryer/heat gun. When warmed up (hot) and the bike dies, check for spark at the plugs. Let cool, then try again. If it's your sensor, no spark when hot, normal spark at room temp. Could be a bad cam sensor even if not "oozing" the goo. More common failures have been the tan colored potting medium, have not seen any posts with the sensors that have black potting medium, but anything is possible.
Lots of threads here with diagnostics and pics on how to trouble shoot that issue. Some are pretty recent. You could also hook up a meter per the troubleshooting cam sensor testing procedures and heat up the cam sensor with a hair dryer, looking for the meter readings to change from a "good" value, to a "bad" value when the sensor gets to operating temps (hot).
Not saying this IS your problem, but a good place to start. Is your bike fuel injected or carbed?
