Just riding the Strip at night is great, just watch the idiots because they are looking at everything also. But Hoover dam is worth visiting. They are building a new bridge across and it is worth seeing the construction going on because it is history and we won't be driving over the dam any more. One thing that sucks is that we have to wear helmets and all those damn little scotters don't.
Just got back from there myself, Swing by LVHD and they have a map with all of the rides mentioned above. Also Red Rock canyon is worth seeing even though its a short ride.
I don't know if you want to stay in Vegas the whole time... could be fun to ride down and stay one night in Laughlin for some cheap gambling and the roads around Laughlin are pretty fun. Then you could slip over to Oatman which is a cool trip back into the old west.
depending on how long you really have, death valley is about 2 hrs away and has some awesome places to visit. this would be at minimum of a LONG day or a overnight trip. we have been on 3, 3-4 day trips out that way this year already and havent been to the same sites (other than the campground).
otherwise i would go with the valley of fire and hoover dam trip. you COULD do both in the same day if you really wanted too. maybe even add red rock in since its just a short ride, but very nice.
