Yeah, I've done quite a few Aeroquip HP hoses/fittings and never used anything special other the specified assembly lube and that was only because I used to be able to buy the stuff at cost.
I heard cable cutters do a really nice job of cutting but I never went out to buy a set big enough to handle the job. Hack saw, band saw, cut-off wheel all work fine. Just make sure you clean out the hose ID before assembly.

The tape's purpose is two fold
Keeps the hose's sheath from fraying as its being cut
Other wise it could (and likely will) end up looking like a birds nest - making it impossible to insert it into the hose nut
At that point it best just to re-cut the end
The other purpose..., keeps fingers from getting impaled by them single strands of stainless - resulting in blood letting..., pain..., copious amounts of cussing and frustration
Once hose is cut - remove the tape..., then insert hose into hose nut
Screw it on / in..., if it starts fighting back - use a small flat blade screwdriver to compress the hose and help coax it into the hose nut
