The harbor freight hi lift jack helps with that. The tines that the bike sits on are wide and will allow the shock to swing out. I don't know if you have anything like that available over there. The PO of my bike had someone crossthread one of the two bolts that go through the shock in to the swingarm so its insanely difficult to get in and out. The first time it came off, I had to use a breaker bar the entire time. I don't think I could remove it with the wheel on.
I don't think mine were cross-threaded (they went back in easy enough) but I too had to use a breaker bar to undo them. I didn't have the bike on the lift. Instead, I sat astride it and used by foot to press the bar down to loosen them.
I think they were a little overtightened, but doing them back up again with the torque wrench, they are still on very tight. Knowing what it's like should make me more confident (and therefore efficient) doing it a second time. Still a big hassle and a couple of hours of time wasted :-(
